Descendent

We get asked all the time if we are going to make a bourbon. As a single malt distillery, it has never been our plan to make one. We did however develop Descendent as a single malt alternative to bourbon. We started by including munich malt to our original mash bill to bring extra layers of caramel. Utilizing the same style fermentation as our other single malt whiskies, we maintain our orchard fruit character. Finally this whiskey is aged in a combination of used barrels and new American oak (char #2 & #4) which allows us to balance barrel influence with Oak & Grist’s distillery character. In the end, a complex sipper and dependable mixer, on the sweeter end of Single Malt and carrying the big oak of a bourbon.
